A box of treats & a new recipe

I received a box of treats in the mail today. My blogging buddy, Danica, has been baking up a storm, getting ready for an online charity bake sale. She is trying to decide which bake sale item to enter and generously offered to send my little family some samples. Oh darn.

A box full of yummy treats?

I didn't want to do it, but she twisted my arm.
(In a nutshell, I took a brief break from my no-sugar rule.)


Breakfast: BRM, 1 Tbsp almond butter, 1/2 banana, 2 cups black coffee (with stevia)
Lunch: 5 oz. sweet potato, 2 zucchinis, 1 cup greek yogurt, agave syrup
PM Snack: samples of each of Danica's treats
Dinner: Portobello Salad with Spicy Mustard Dressing from Veganomicon



This was good. Very, very good. Referring to the portobello mushrooms, my husband's comment was, "This tastes a lot like a hamburger. These would be really good on a sandwich."

And I agree wholeheartedly.

The original recipe was vegan, but I added goat cheese. It was very tasty and easy to prep and make.

Pasta e Fagioli

Yesterday we had Pasta e Fagioli from the Veganomicon recipe book.


It was a great, basic meal. Funny enough, my son couldn't get enough of the cannelini beans.

For the pasta, I used Brown Rice Pasta and I really enjoyed the flavor. I would make this recipe again.

Catch up & a contest

It's not what you're thinking...I haven't been avoiding you, dear blog.

I was actually quite good in warding off yesterday's Sugar Beast.

Breakfast: BRM, 1 Tbsp almond butter, 1/2 banana
Snack: Purple monster
Lunch: 1 cup greek yogurt, agave syrup, 2 zucchinis, 6 oz. sweet potato
PM Snack: 2 freshly-baked Carrot Apple muffins with almond butter on top
Dinner: Pasta e Fagioli from Veganomicon (I'll post photos later, but it was very easy to make and delicious!)

A plan to beat the sugar cravings

Starting tomorrow, I'm giving up sugar for the week.

My sugar cravings have spiraled out of control, and it's time to put an end to it. Next week I'll be replenishing my body with good clean food, lots of veggies, and no more chocolate.

I've stocked up on good foods, and I'm looking forward to beating the sugar cravings.

Hearing the Siren Song of Sugar

I've been slacking in my fitness posts lately. Sorry about that.

I've been itchy for sugar lately. Like, jonesing.

I haven't given in all the time. Just some of the time. ; )

However.

I'm thinking that I might need a good old fashioned No Sugar week, next week. I think sugar begets sugar. Meaning...those cadbury easter eggs that I had earlier this week are still rushing through my system and singing their Siren Song.

The good news is that I've been getting out and getting my walk on.

I'm off to get some sleep, now. I'm running on empty.

Yummy new recipe

Today's new recipe was a nice success after last night's flop. But first things first: today's daily eats were...

Breakfast: Bob's Red Mill, almond butter, 1/2 banana, 2 cups black coffee
Snack: 2 Lindor truffles, 2 vegan carrot apple muffins with almond butter and vegan choc chips
Lunch: 1 cup greek yogurt with agave syrup, 2 zucchinis, 4 oz. sweet potato
Snack: Cadbury's milk chocolate easter eggs (I succumbed again...I've got to kick this!)
Dinner: steamed broccoli, 6 mushroom crescents



These were delicious, and we'll be having them again. My son, who doesn't like mushrooms, asked for more. Even after I told him what he was eating.



The reason mine look different than the ones here, are because I used these wraps instead of making the pastry dough. The pastry dough looks delicious, but these wraps are:

1. already made
2. 160 calories for 10 of them!!


I'd love to find other fillings for these wraps. If you a suggestion for another filling (or a recipe link), please send it my way!

A big disaster

Oof. I made a big bummer of a meal tonight. Big time.

I took a tried-and-true recipe for Paella, and screwed it up. I had good intentions, though.

I used soy-chorizo instead of chicken sausage.
I used vegetable broth instead of chicken broth.
And the big one: I used brown rice instead of white rice...and it was way underdone!! It was crunchy. Just awful.

So.

It went in the trash.

Oh well. They can't all be good.

Today's eats were as follows...

Breakfast: Bob's Red Mill, 1/2 banana, almond butter, 2 cups black coffee (stevia)
Snack: 2 vegan carrot apple muffins, almond butter, vegan chocolate chips
Lunch: handful of kale chips, approx. 1 cup greek yogurt with agave syrup, 2 zucchinis baked like fries, 5 oz. sweet potato baked like fries
Snack: (came home from a walk, starving...) 3 handfuls vegan chocolate chips, 3 spoonfuls of almond butter (yup, just off the spoon)
Dinner: paella leftover orzo salad (about 1 cup), Purple Monster, 6 shrimp picked out of the awful "paella" (first time I've had "meat" in about 3-4 weeks!)

I've added a new feature in one of the right-hand columns. It's a place where I can track my daily workouts. Cause I'm a gal who likes charts.

And measurable data.

I'll update this chart on a daily basis, as a new way of keeping myself accountable.

I still have to figure out how to make it "clickable." I mean, right now it's kinda small. I'd like it to be able to be made larger when the image is clicked. Did that mumbling make any sense at all?
